Stark Naked Kit Pinot Grigio

This Pinot Grigio style white wine produces a pale coloured, light bodied wine, crisply fruity with hints of pear and melon.

The kit includes 11 litres of pure grape juice and all sachets required. There is no need to add water.

By carefully following the instructions provided in the kit, you will make outstanding wine.

We recommend that you lay the wine down and store if possible to allow the wine to mature and age to allow the desired varietal characteristics to develop.

Necessary equipment:
iBrew 15 bottle fermenter, bucket and lid, siphon tube, stirring paddle, (all contained in the iBrew Complete Micro Winery) and optional hydrometer.

Winemaking Instructions:
One
Make sure all equipment is sterilised prior to use.
Two
Rehydrate the yeast as per the instruction on the label.
Three
Pour the juice into the sterilised bucket. There may be some crystallised sugars at the bottom of the jerry can. This can be rinsed out with a little cold water.
Four
If you have a hydrometer, check the gravity and record this for later use.
Five
Add the rehydrated wine yeast directly to the liquid. Stir gently with the sterilised paddle. Then loosely place the lid on the bucket and leave to ferment at room temperature.
Six
On day 7 check the gravity and record or continue to 7.
Seven
Sterilise the fermenter and siphon tube, rinse both, then siphon the wine from the bucket into the fermenter being careful not to disturb the sediment.
Eight
Once transferred to the fermenter, add a little water into the airlock. Leave for 7-12 days for the fermentation to finish. Check the gravity (this should be below 996) and record or continue to 9.
Nine
Add the stabiliser sachet to the fermenter and stir really well for 2 minutes to remove any gas trapped in the wine.
Ten
Add the Finings A sachet directly to the wine, stir for 2 minutes then leave for 1 hour before adding Finings B sachet, stir in gently until all contents are mixed well.
Eleven
Place the fermenter in a cool place (not in direct sun light) and leave undisturbed until the wine is perfectly clear. Leave for 3-4 weeks. Check the gravity and record, you can work out the Alcohol level (ABV)  by using the gravity figures you have recorded.
Twelve
Then dispense the wine, without disturbing any sediment into your sterilised bottles or wine bag.
Thirteen
Your wine is now ready to drink, however it will improve considerably if laid down in a cool dark place and allowed to mature. So, lay the wine down to allow the wine to mature and age to the desired varietal characteristics.
