Brouwland Dried wine yeast BIOFERM Malic
A relatively new yeast strain that reduces malic acid by up to 50%: too much malic acid is a common problem in fruit wine where it generates an unpleasant acerbic, sour taste. This yeast consumes malic acid during the fermentation (each gram of malic acid is turned into 0.03% ABV). This yeast strain consumes 18 gram of sugar to create 1% ABV alcohol and is therefore ideal for making wines with a low alcohol ABV from high density musts. The yeast also increases the colour extraction (so its very suitable for red wines) and has a neutral aromatic profile. Temperature range: 20 to 30 °C. Alcohol tolerance: 14 to 15 % ABV. Dosage: 2 to 3 grams / 10 litres.
