This is a top fermenting yeast that is most suitable for amber coloured and darker beers. Fermentation is fast and there are low residual sugars. Formation of fruity esters.

Fermentation temperature: 18 to 25 °C
Dosage: depends on the original gravity:
1.050 = 5 g /10 l
1.080 = 8 g /10 l
Why and how to make a yeast starter?
For bigger homebrews or worts with a gravity greater than about 1.050, making a yeast starter is usually recommended. The quantity of the yeast cells is critical and affects the quality of the end beer. Most homebrewers don't use enough yeast, and his causes incomplete fermentations, and also poor flavours and a higher chance of infections . . . all caused by a low yeast cell count. This is why its often a good idea to make yeast starters. So how do we go about this? Dissolve 50 grams of malt extract in 500 ml water and add 5 g of yeast nutrient (e.g. nutrivit). Boil for 5 minutes and then pour into a thoroughly cleaned and sterilized container (Erlenmeyer flasks are ideal). Then seal using cotton wool and allow to cool. When it has cooled, add the yeast and aerate (jsut skake well, or even better, use our sterile air filter and wort oxygenator system). Seal with an airlock if possible, and maintain the temperature between 21 and 26 °C for about 12 hours so that the yeast cells multiply. Your yeast starter is now ready to use . . . or you can repeat the process to further increase the yeast cell count. Add the starter to your beer wort. If you don't want to add it immediately, then keep it cool in the fridge until you are ready to pitch: make sure you take it out again a few hours before use so that it can gradually warm up to room temperature before being added to your wort (this avoids a temperature shock to the yeast cells).
