How do I figure out which fining agent I should use?
An easy way (and one of the best ways) is trial and error. Take a few of samples from the wine to be fined and put them in test tubes. Add a few mls or grams of different fining agents to each tube. Other test tubes with wine or juice containing pecto enzyme, and alpha amylase (found in starch rich fruit) are helpful. Leave to clear for a few hours and you will easily see which fining agent gives you the best result.
