Dublin Draught Stout Clone 4.2% ABV All Grain
An excellent clone of the world's best known "classic" Irish stout

EBC: 80
Target Original Gravity: 1.038
Target Final Gravity: 1.006
Target ABV: 4.2%

Ingredients:
- malted barley (3.95 Kg)
- hop pellets (48 grams approx), adjusted for alpha values
- dried brewing yeast (Ale)
- priming sugar (131 grams dextrose)

Instructions:
Please read all the instructions, including the Notes below, before starting your brew.
- heat 10.5 litres of water to 72 oC
- crush grains and add to water along with the flaked barley
- mash at 66 oC for 60 minutes
- add boiling water to raise grain bed to 76 oC
- hold for 5 minutes
- recirculate until wort is clear
- sparge with hot water to maintain grain bed at 77 oC
- collect 26 litres of wort and boil for 90 minutes
- add hop pack A 60 minutes before end of boil
- at end of boil, cool wort and transfer to fermenter
- aerate wort and pitch yeast
- ferment at 20 oC
- rack to secondary when fermentation is complete
- bottle when beer clears
- if you are kegging this beer, you might consider using a nitroxen gas mix

Note 1: Hops should be placed in our fine mesh nylon drawstring bags and then added to the wort.
Note 2: After cooling the wort, remove the hop bags and and stir the wort vigorously in a circular motion for a minute to create a whirlpool (this will cause any particles to gather in the centre of the boiler). Wait a few minutes until the whirlpool stops and then gently transfer the wort into your fermenter, avoiding the remaining hops if possible.  Its good to splash it about as it goes into the fermenter since adding air (oxygen) at this stage is good for the yeast.
