Viking Marauder All Grain Double IPA 8.0% ABV

This kit is based on a commercial USA Citra Double IPA gold winner that has also won many other awards as one of the best Double IPAs ever created. Its an amazing beer and may well become your favorite homebrew IPA / DIPA. Its all about the unique grain bill and massive dry hop bill. Although its a hop monster with almost 240 grams of hops, its mostly dry hops so its not too bitter. The malt and hop balance is excellent and this is one very tasty beer.

Makes 20 litres of wort based on 70% efficiency so its suitable for any all grain setup; actual volume will vary depending on your setup.

It contains:
- almost 7 Kg of a unique grain bill, containing 6 grain types including Colorado honey malt
- almost 240 grams of Columbus, Citra and Amarillo hop pellets in 4 separate additions,
- 2 dry yeast sachets OR WLP001 liquid yeast,
- Irish moss,
- 4 muslin bags.

Target ABV: 8.0% (OG: 1070, FG: 1011)
Target IBU: 70
Target EBC: 12

Instructions
Crush grains with a Bulldog Malt Mill and mash in 23 litres of water at 64 oC for 60 minutes. Mash out at 75 oC; sparge with 5 litres of hot water at 75 oC. Bring to a rolling boil and add hops at times indicated, using the included muslin bags for each hop addition (topping up if wort volume falls below 16 litres, add the Irish moss 15 minutes before end of boil). Cool to 20 oC and dilute so that the specific gravity is 1.070; then pitch the 2 yeast sachets OR make a yeast starter and pitch the WLP001 liquid yeast. Ferment at 19 oC for 10 days; its important to keep the temperature as stable as possible. Once hydrometer readings indicate that fermentation is complete add the dry hops. 7 days later remove the dry hops, transfer the beer to a Bottling Bucket, add 120 grams of dextrose OR 130 grams of spraymalt OR 1 litre of wort, gently mix and then bottle.
